My boss is coming to my house in the morning to meet – and eat. This is what we do. She is awesome and lives near me and so occasionally instead of meeting at “an office” – we meet here. And I cook.
Tomorrow morning? Caramel Soaked French Toast.
(And, yes, it is THAT good.)
Here is the recipe:
1 ½ c. packed brown sugar, firmly packed
¾ c. butter
¼ c. plus 2 Tbsp. light Karo syrup
10-12 (1 ½- inch thick) French bread slices
5 large eggs
2 ½ c. milk (1% or 2% OK)
1 Tbsp. vanilla
¼ tsp. salt
3 Tbsp. sugar
1 ½ tsp. cinnamon
¼ c. butter, melted
Fresh raspberries (optional)
Stir together first 3 ingredients in a medium saucepan over medium heat, and cook, stirring constantly, 5 minutes or until mixture is bubbly. Pour mixture evenly into a lightly greased 13 x 9 baking dish. Arrange bread slices over syrup. Whisk together eggs, milk, vanilla, and salt; gradually pour over bread slices. Cover and chill at least 8 hours. Stir together sugar and cinnamon; sprinkle evenly over bread. Drizzle evenly with ¼ c. melted butter. Bake at 350 degrees for 45-50 minutes or until golden and bubbly. Let stand 10 minutes before serving. Garnish with raspberries, if desired.
But you see that line that says brown sugar? That very first line? It’s an important part. It makes the caramel with which the yumminess is soaked. You need the brown sugar. It is not optional.
And I? Didn’t have enough.
So, like the saying goes – the road to hell and all – mine is paved with brown sugar and off to the store I go. At 8:30 at night. In my jammies and flats.
It was a rockin’ look, I assure you.
Because, you see, this dish has to soak overnight, so I couldn’t do this in the morning like a sane person. It takes 20 minutes to make it. But in MY world, you must add an additional 45 minutes to go to the store to get the ONE G-DAMNED INGREDIENT YOU DON’T HAVE ENOUGH OF and wait in an extraordinary line while the moron in front of you wants to know how he might buy two of the very cheap wine refrigerators that are for sale on the store floor.
I made caramel for the first time.
It is soaking.
It will be awesome.
And I will garnish with strawberries instead.
Because I have champagne as well.
